started my working life at: The
Hilton Group The first meal I cooked
was: smoked duck breast with candied
cherry and pancetta - ambitious! The best meal I have
ever eaten was: simply grilled oysters
with crisp pancetta and Gruyere cheese I would most like
to cook in a kitchen with:
Micheal Roux I would like to
learn more about: seasonal and locally
sourced produce - I'm always on the look-out for new
ideas! I think TV chefs are:
ok, but over simplifiy the end results of dishes they
plate. I came to work at the
Dalmeny because: it has a great long
standing reputation and to develop the Atrium concept
further. The food we cook in the
Atrium is: freshly prepared using local
ingredients brassiere style I hope the Atrium Diners:
are happy with the end result and would hope to see
them again!
